Air is better islanutor than water. When you fill the air pockets in the cloth with water, you have turned the cloth into a much better conductor of heat, when what you need is something that does NOT conduct the heat of the hot pan. Also, a wet cloth is slippery. The hot dish could slip right out of your hand and splash boiling juice all over you, burning you.
